It's often easiest to create a separate organization in Zero for each client and add their site(s) there. This way you can invite the client's team to work on their site, without worrying about them accessing others.

You can add the same repository multiple times, just with a different path to the root of each Astro site. So if your monorepo has /apps/marketing and /apps/docs, those become two separate sites in Zero.

Zero's billing is per site. Each site you add counts as its own subscription.
